Don't have an ice cream machine? No kitchen aid stand? No worries. I will show you how to make a delicious avocado sorbet in 5 minutes. (This does not count pre-freeze time).
Recipe:
- 1/2 cup simple syrup
- 1 cup corn syrup
- zest of 2 limes
- 3 avocados
- 2 teaspoons lime juice
- 1 cup chopped cilantro
Prep avocados, cilantro, and lime.
Prep these avocados 4-5 hours ahead. You can also buy pre frozen avocados at Trader Joe's if you don't want to wait. Or you can prep these the night before.
Score your avocados and scoop it out with a knife.
Lay all your avocados out on the foil, and squeeze a good amount of lime juice on top. This is so that the avocados do not brown (plus, it will flavor the sorbet).
Make a little tin foil packet as I have done below. Just place another sheet of foil over the avocados and seal the edges. Place into the fridge.
Most sorbet recipes require you to boil corn syrup, water, and sugar. But there is no boiling or cooling off (another 1 hour of wait time) here. Just mix simple syrup (which is a mixture of sugar and water). You can buy simple syrup at any store, and also add the corn syrup with the chopped cilantro and lime zest. That's it, put it aside or better yet, put it in the fridge to keep it cold.
Take out your frozen avocados, and prep the liquid that you put together.
Pour the liquid into the frozen avocados.
Pulse in the food processor until smooth.
Now serve. I froze my cup to keep the sorbet nice and cold. Garnish with cilantro and lime. This went straight from the processor to the cup. It will be very cold and quite firm because you pre-froze the avocados.
To get a hardened sorbet texture, put the mixture in the freezer. Take the sorbet out about 20-30 minutes before you are ready to serve so that it is nice and soft.
